Aubergine is a very versatile vegetable and works well in lots of dishes including stews, curries and salads. Most popular dishes include ratatouille, parmigiana and stuffed aubergine.
Seasonality:
The British season starts in May and ends in October, although aubergines are at their best between July and September. At other times of the year they're typically sourced from Spain.
To cook:
Thinly slice and grill for 2 minutes, prick with a fork and bake whole for 50 minutes or slice and roast for 15 minutes.
To store:
Store in the fridge or cool dark cupboard, and eat as soon as possible to enjoy it at its best.
We always buy this chicken, never fails to be absolutely great. Wouldn't have any other.
