This is not the dry-skinned Turmeric you get in Asian markets, it's very fresh with moist skins. You'll need to air dry it outside the fridge if you want it to form a skin so it will keep -- totally doable. But why would you? It's so fresh and plump that you can grate it as you would Ginger into recipes, and, if you have a palate for it, raw over a coleslaw. Delicious!
